•     What a Difference a Glass Makes
If you are going to drink the nectar of the gods then why not drink it from the glass created especially for ice wine?  This seminar will teach you why Professor Claus J. Riedel was right when he recognized that the bouquet, taste, balance and finish of wines are affected by the shape of the glass.

•    Cheese And Ice Wine … An Unexpected Delight
Learn about how most cheese’s richness begs for that crucial acidity found in a sweet Ice Wine.  Cheeses are inherently savory and sometimes salty and when served with the sweetness of Ice wine, it creates a lovely balance that makes for unexpected dinner course and an unexpected match for your guests.  Find out how to serve Ice Wine with cheese for more than just dessert to delight your most discriminating guests.

•    The Romance of Chocolate and Ice Wine
Chocolate and Ice Wine are among life’s great indulgences, and they’re good mood setters, too…just as long as you know how to pair them together.  Like wines, chocolate can be fruity, earthy, or salty on the palate. When you learn to identity the dominate flavors in fine chocolates, selecting the perfect wine can create the perfect ending to any meal.

•    The difference a D makes when selecting an Ice Wine.
There are Ice Wines and there are also Iced Wines.  Both develop a rich deep flavor and sweetness associated with dessert wines… but there are different processes used in their creation.  To celebrate the true creation of Ice Wine in New York and the winter warriors who brave the elements to harvest these frozen grape pearls in the dead of Winter, you need an education in the process to understand what sets these two products apart.
