Myth #1

All dessert wines
are the same.

We will explore the differences between Ice Wines, Iced Wines, Dessert Wines and Late Harvest Wines - from grape selection to processing, what are the differences between ice and iced and why – all myths will be de-bunked!

Myth #2

Terroir doesn't matter.

We will be tasting wines
from the current Viticulture Regions
of New York – Long Island, Hudson Valley, Finger Lakes, Niagara Escarpment and Lake Erie Region.  This seminar will include blind tastings and you will leave an expert on understanding the differences between the NY regions and most importantly the whys.  You will be able to identify where the Pinot Noir and Riesling came from in New York and not just by taste. Myth #3

Corks are Best.

We will explore all the
alternative closures – corks, synthetic corks, boxed wines, screw caps, wine kegs and more.  What impact does the type of closure have on the wine, if any?  What is the current industry standard and where is the industry heading?  What is the standard in the Finger Lakes and why? What are other New York Regions doing?  Is there a trend developing?  What state is leading the controversy and why?

Myth #4
White wine pairs
with fish/fowl and
red wine with meat
.

We will explore the rules of white wine and red wine food pairings. Where did the myth begin?  Are there rules?  Is it personal preference?  Guests will learn the secrets to wine and food pairings. The dinner served is an
integral part of the seminar.

Myth #5

Points -
Really Matter.

This seminar will focus on
each of the rating systems
used by national experts and
national wine magazines.  Where
did the point system originate
and why? Are there standards and
if so, why?  We will explore
different wines and their ratings
plus blind taste several recent
national winners and discuss
their ratings in depth.

Myth #6
Norton is Gone.

Among the two dozen or so grape species native to North America,
only one has proven itself capable
of good dry table wines. Its scientific name is vitis aestivalis, and its
best  representative is becoming increasingly well-known once
again. This seminar will focus on
the history and current status of
the beloved Norton grape. You will
be surprised how history impacted
America’s native grape.
