The Wines of South Africa
South African wine has a history dating back to 1659, and at one time Constantia was considered one of the greatest wine producers in the world. Constantia was also known for its Muscat and dessert wines… hmmmm southern hemisphere and dessert wines? Yes, it is true, come taste for your self.
For this WAW we will taste the different South African wines with each course.
Samosas – A vegetarian pastry pocket filled with a savory filling. Chef Cass’s filling will contain spiced lentils. Yum!
Potjioekos – literally translated means “small pot food” and this is a stew that is prepared outdoors in a round cast iron three legged pot typically found in South Africa. The recipe includes meat, vegetables and some kind of starch usually a rice or potatoes. Chef Cass’s Potjioekos will have cumin, coriander, cloves and star anise plus beef, onions and carrots.
Caakiri – a dessert from Western Africa, similar to our modern day rice pudding. Chef Cass will add his special spin using unique African spices.
