Cool fermentation in stateless steel tanks is used to maintain the fruit and floral aromas and flavor of the wine. Unlike most white wines, Gewurztraminer juice spends several hours on its skins in order to pick up the complex rose petal and lychee fruit aromas characteristic of the variety. This wine is racked quickly after fermentation to prevent lees contact. Upon pressing, juice is reserved to add back at bottling to enhance body, aroma and balance of the wine.
