Vineyard Notes:
Riesling is a cool-climate grape, making it ideal for the Finger Lakes Region. To allow for the perfect amount of sun, leaf removal is performed on East and West sides of the vines. The vines are mechanically cultivated throughout the summer to control weeds and control vine vigor. Cluster thinning was performed around mid summer to optimize the fruit quality of this wine.
Production Notes:
Cool fermentation in stainless steel tanks is used to maintain the fruit and floral aromas and flavor of the wine. This wine is racked quickly after fermentation to prevent lees contact. Upon pressing, juice is reserved to add back at bottling to enhance body, aroma and balance of the wine.
