Riesling grapes love our Finger Lakes climate and produce a wide variety of delicious wines. Our Wild Ferment Riesling is fermented in small batches in stainless steel tanks using naturally occurring, wild yeast.

Viticulture notes.  Each vine was hand-tended to enhance sun exposure and fruit ripening.  Crop levels were closely controlled to allow the fruit to express maximum aromatic intensity and complexity. Natural fermentation was used to preserve the crisp acidity and natural green apple and citrus notes.

Winemaking notes. Small lots of grapes were selected from parcels of the estate vineyard and were picked at a moment that would capture the aromatic intensity and crisp acidity of a cool-climate Riesling. 

We then hand selected a small lot of Riesling and fermented it naturally in stainless steel tanks to preserve the natural acidity and bright green apple and citrus notes.

In 1974, Andrew Colaruotolo planted a few acres of vines on a hilltop in Fairport, NY with plans to make wine for his friends and family. Almost 45 years later, his vineyard has expanded to over 40 acres and produces of 35 varieties of wine. In honor of Mr. C, we have hand-selected grapes from Block 1, that very first block of our vineyard, to celebrate his legacy and his love of wine.

Winemaking notes. The grapes were hand selected to achieve peak ripeness, and then pressed, fermented and aged together simultaneously. Fermentation occurs at very low temperature in stainless steel tanks and the wine is then bottled young to preserve its fresh, vibrant, flavors.

The long, cold winters of the Finger Lakes region provide the ideal conditions for our authentic ice wine.  We hand pick and press frozen grapes in frigid weather to yield a trickle of sweet nectar with a stunning array of possible fruit flavors depending on the vintage.  Our 2016 Fiori -8 o Ice Wine is a full bodied explosion of sweetness and stone fruit flavors with a touch of locally made spirits for a smooth, warm finish.

Viticulture notes.  Vidal Blanc is a French-American white wine grape developed by Jean Louis Vidal in France in the 1930s. Muscat Ottonel is a European Wine of the Muscat family, notable for its use in dessert wines; it has a light finish with a beautiful floral aromatic start. Riesling, a German grape, is one of the most versatile grapes grown in the Finger Lakes region. Throughout the season, our ice wine vines are not thinned to help maintain the high acidic nature that Finger Lakes grapes are known for. We produce our renowned -8 o Ice Wine using the authentic German Eiswein method leaving the grapes on the vine past normal harvest and into the winter. When the temperature dips below 18oF (-8oC) for the first time, usually in December or early January, we hand pick and press the frozen grapes outdoors.

Winemaking notes. The frozen grapes are pressed together, outdoors in a classic basket press, producing a sweet syrup which we ferment at cool temperatures with special yeast to maintain a bright nose and beautiful aromas.  Fermentation proceeds very slowly, often persisting through the winter and into spring. Once the juice has fermented, we add locally made spirits into the finished product for its unique, warm finish.

Aging. Store at cool temperature (approx.55º), out of direct sunlight.  As the wine ages in the bottle in your cellar, a tiny bit of air slowly percolates through the cork, which micro-oxygenates the wine, darkening the color slightly, eventually turning a beautiful gold hue.  Its flavors also slowly age, from bright fruit flavors like citrus, peach and pineapple, toward “darker” flavors like apricot, raisins and honey. In addition, the alcohol content of the wine enhances, adding a rich warmth to the end of the wine.     

Serving temp.  45-50ºF 

Tasting notes.  Our Fiori -8 Ice Wine is a lusciously sweet explosion of honey, apricot, and subtle apple notes followed by a long, warm, satisfying finish. 

Pairing suggestions.  Rich appetizers like blue-veined cheeses and foie gras; drizzled over cheesecake, Crème Brulee and ice cream, as well as fruit or nut pies.

Winemaking notes. We employed several techniques to produce greater body, weight and roundness than is typical in dry Rieslings, and achieve a crisp yet balanced wine despite the total absence of residual sugar. This Riesling was fermented in acacia wood barrels, which were periodically moved into and out of a cooler to help maintain moderate fermentation speeds and temperatures. No malolactic fermentation was performed. After fermentation, the wine remained in barrels for 6 months on lees which was frequently stirred back into the wine. After aging, the wine was removed from the barrel, and quickly bottled to capture its youthful intensity.

Tasting notes. This exceptional dry Riesling was fermented and aged 7 months in Acacia wood barrels to add roundness and complexity to the wine’s lovely natural acidity. Bright on the nose, fruity and full in the mouth, and a touch spicy in the finish.

Pairing suggestions. Crab cakes, curries, fish served with lemon, and other citrusy and spicy dishes.

Pétillant Naturel (meaning “naturally sparkling”) is a beautifully simple, centuries-old method of making lightly sparkling wines that are usually produced and enjoyed soon after harvest. Our Muscat Ottonel grapes, with their lovely fruit and floral aromas, are perfectly suited to this style of wine. “Pét-Nats” are bottled before fermentation is complete, leaving a small amount of sugar to ferment in the bottle, which adds light carbonation, a velvety texture and a slightly cloudy appearance to the wine.

Winemaking notes. We lightly press our Muscat Ottonel grapes and leave the juice in contact with the skins for several hours to maximize varietal character. Fermentation is performed in stainless steel tanks at cool temperature. When the wine reaches 0.5 degrees Brix (about 15 g/L sugar), we bottle. Fermentation continues until the wine is bone dry. This ancient process involves no filtering, so the leftovers from fermentation (called “lees”) remain in the bottle and give Pét-Nats their characteristically hazy appearance.

Wines produced from the Muscat family of grapes have been prized for centuries for their vibrant fruit and floral aromas that translate beautifully into naturally sweet dessert wine styles.

Viticulture

Grape. 100% Muscat Ottonel

Harvest date. November 1, 2016

Appellation. Finger Lakes

Viticulture notes. Muscat Ottonel is the first grape we pick each harvest, usually in mid-September. We also leave a small number of clusters on the vine. If our October weather cooperates, the grape berries will ripen further and desiccate slightly, but the skins will remain intact. Hand-picking these grapes in late October or early November allows us to produce a naturally sweet wine that is balanced beautifully by the Muscat Ottonel grape’s floral and citrus character.

Our limited-production single-vineyard Cabernet Sauvignon reserves are delicious examples of our ability, developed over the past 20 years, to produce red wines with not only a classic tannic structure but also the Finger Lakes region’s signature berry notes and clean finish.  Tasted together, these two wines display the subtle differences between grapes of the same vintage produced by two premier growers.

Winemaking notes. Grapes from Sawmill Creek and Sunrise Hill were fermented separately in bins with twice or three times daily punch-downs to ensure proper tannin, color and flavor extraction.  The resulting wines then underwent malolactic fermentation to round out the mouth-feel.

Viticulture notes.  Our vineyard crew performs a great deal of hand-thinning & leaf removal on our blocks of Pinot Noir grapes to open up the canopy. The thinner crop allows the vine to focus its nutrients on the primary bunches.  Greater sun exposure enhances ripening and encourages tannin development.

Winemaking notes. After we harvest, crush and de-stem our Pinot Noir grapes, we maintain the juice in contact with the skins in a cooler for 24 hours, a technique called “cold-soaking”.  We then direct-press, let the juice settle for 24 hours, rack, and ferment at cool temperature, into order to ensure the natural lightness and freshness of the wine.

Winemaking notes: Small lots of estate-grown fruit are picked separately at various levels of maturity and ripeness. We ferment each lot separately in stainless steel tanks using cool temperatures to preserve the aromatic integrity of the variety. Fermentation is closely monitored and arrested at a point where the residual grape sugars are balanced by the wine’s natural vibrant acidity. The individual batches, each with distinct characteristics, are then carefully blended to yield a complex wine displaying the nuances of each small lot. Finally, we bottle the wine young to preserve its freshness and liveliness.

2016 Estate Block Rieslings

Finger Lakes Estate Grown & Bottled

Riesling grapes naturally express the terroir in which they are grown.  They grow happily at Casa Larga,  producing delicious aromatic wines from crisp and dry to smooth and sweet, with beautiful natural acidity and a range of flavors from green apple to mineral.

Viticulture

Grapes: 100% Riesling

Appellation: Finger Lakes

Viticulture notes: We hand-tend each Riesling vine to enhance sun exposure and fruit ripening. Crop levels are closely controlled to allow the fruit to express maximum aromatic intensity and complexity.

Winemaking

Winemaker: Matt Cassavaugh

Fermentation: In stainless steel tanks at low temp.

Aging: In stainless steel tanks.

Winemaking notes: Small lots of estate-grown fruit are picked and fermented separately in stainless steel tanks at cool temperatures to preserve the aromatic integrity of the variety. Fermentation is closely monitored and arrested at a point where the residual grape sugars are balanced by the wine’s natural vibrant acidity. We bottle the wine young to preserve its crisp and fresh character.

Residual Sugar: 0.3% (Dry)

Tasting Notes: Block 1, the oldest section of our vineyard (1975), yields wines with more weight, balancing the natural acidity without residual sugar. This dry wine exhibits mineral notes that perfectly compliment fresh fish and shellfish served simply with lemon.

Harvest Date: October 12, 2016

ABV, pH, TA: 11.5%, 3.0, 8.5 g/L

Residual Sugar: 3.1% (Medium Dry)

Tasting Notes: Block 2 (1980) is rockier than other parts of our vineyard. It produces lower-yielding vines with small berries and loose clusters which intensify flavors. The stone fruit notes of this lovely wine pair deliciously with ham, pork and turkey and their traditional sides.

Harvest Date: November 2, 2016

ABV, pH, TA: 7.7%, 2.9, 8.9 g/L

Residual Sugar: 4.5% (Medium Sweet)

Tasting Notes: We delayed picking a small section of Block 4 until November. The result is this delicate sweeter Riesling reminiscent of Auslese, with a honeysuckle nose and pear on the mid-palate. Enjoy with hot and spicy dishes, blue-veined cheeses, and desserts.

Residual Sugar: 1.5% (Medium Dry)

Tasting Notes: This wine exhibits the classically Riesling green apple notes that pair with a wide range of meats. Block 5 (2003), the youngest section our vineyard, slopes to the north. The less intense sun exposure that favors vibrantly aromatic grape varieties.
