Riesling grapes love our Finger Lakes climate and produce a wide variety of delicious wines. Our Wild Ferment Riesling is fermented in small batches in stainless steel tanks using naturally occurring, wild yeast. 

Viticulture

Grape.  100% Riesling

Appellation. Finger Lakes

Harvest dates. October 19th, 2017

Viticulture notes.  Each vine was hand-tended to enhance sun exposure and fruit ripening.  Crop levels were closely controlled to allow the fruit to express maximum aromatic intensity and complexity. Natural fermentation was used to preserve the crisp acidity and natural green apple and citrus notes.

Winemaker.  Matt Cassavaugh

Fermentation. In stainless steel tanks at low temperature

Vintage.  2017

Alcohol by volume. 11.0%

Aging. Stainless steel

Residual sugar.  2.1%

IRF sweetness scale.  Medium-Sweet

Acidity.  pH 3.0, TA 9.0 g/L 

Bottling date. May 28, 2018

Production.  150  cases 750mL

Year first produced.  2014 

Winemaking notes. Small lots of grapes were selected from parcels of the estate vineyard and were picked at a moment that would capture the aromatic intensity and crisp acidity of a cool-climate Riesling. 

We then hand selected a small lot of Riesling and fermented it naturally in stainless steel tanks to preserve the natural acidity and bright green apple and citrus notes.

Availability.  At our winery in Fairport; at CasaLarga.com for direct shipment to residences and workplaces in 40 states.

Aging. Store at cool temperature (55º-60ºF) and out of direct sunlight.  This wine is produced to be drunk young, crisp and fresh, i.e. within 2 years of bottling.

Serving temp.  50ºF 

Tasting notes.  Our crisp Wild Ferment Riesling exhibits a light floral nose, bright green apple notes, subtle lemon citrus tones and a naturally acidic finish

Pairing suggestions.  Crab cakes, curries, fish served with lemon, and other citrusy and spicy dishes.
