Wines produced from the Muscat family of grapes have been prized for centuries for their vibrant fruit and floral aromas that translate beautifully into naturally sweet dessert wine styles.

Viticulture

Grape. 100% Muscat Ottonel

Harvest date. November 1, 2016

Appellation. Finger Lakes

Viticulture notes. Muscat Ottonel is the first grape we pick each harvest, usually in mid-September. We also leave a small number of clusters on the vine. If our October weather cooperates, the grape berries will ripen further and desiccate slightly, but the skins will remain intact. Hand-picking these grapes in late October or early November allows us to produce a naturally sweet wine that is balanced beautifully by the Muscat Ottonel grape’s floral and citrus character.

Fermentation. In stainless steel tanks at low temperature.

Winemaking notes. We lightly press our Muscat Ottonel grapes, and leave the juice in contact with the skins for several hours to maximize varietal character. Fermentation is performed in stainless steel tanks at cool temperature. The wine is then aged in stainless steel tanks and bottled to capture the wine’s aromatic qualities at their peak.

Tasting notes. This soft and sweet Muscat Ottonel has a fragrant floral nose, a lovely citrus mid-palate, and a clean finish.  

Pairing suggestions. A delicious little apéritif, this wine is also a beautiful accompaniment to vegetarian sushi, bleu cheeses, and fresh fruit.

Viticulture

Grapes.  100% Pinot Noir

Viticulture notes.  Our vineyard crew performs a great deal of hand-thinning & leaf removal on our blocks of Pinot Noir grapes to open up the canopy. The thinner crop allows the vine to focus its nutrients on the primary bunches.  Greater sun exposure enhances ripening and encourages tannin development.

Winemaking notes. After we harvest, crush and de-stem our Pinot Noir grapes, we maintain the juice in contact with the skins in a cooler for 24 hours, a technique called “cold-soaking”.  We then direct-press, let the juice settle for 24 hours, rack, and ferment at cool temperature, into order to ensure the natural lightness and freshness of the wine.

Tasting notes.  This crisp dry rosé of 100% Pinot Noir has lively natural acidity and exhibits delicate berry and cherry notes. 

Pairing suggestions. Egg and cheese casserole, tuna sashimi, rice dishes, lamb tagine, grilled fish, fruit and goat cheese.

Winemaker Matt Cassavaugh melded small batches of select grapes to create this delicious medium sweet Riesling with aromas of apples and stone fruits.

Viticulture notes: We hand-tend each Riesling vine to enhance sun exposure and fruit ripening. Crop levels were closely controlled to allow the fruit to express maximum aromatic intensity and complexity.

Winemaking notes: Small lots of estate-grown fruit are picked separately at various levels of maturity and ripeness. We ferment each lot separately in stainless steel tanks using cool temperatures to preserve the aromatic integrity of the variety. Fermentation is closely monitored and arrested at a point where the residual grape sugars are balanced by the wine’s natural vibrant acidity. The individual batches, each with distinct characteristics, are then carefully blended to yield a complex wine displaying the nuances of each small lot. Finally, we bottle the wine young to preserve its freshness and liveliness.

This delicious, distinctive, unoaked wine beautifully melds two Finger Lakes classics: the bright, green apple notes of Riesling and the subtle aromas and minerality of Chardonnay.

Viticulture Notes: The hallmark of these two cool climate grape varieties and the Finger Lakes terroir is a vibrancy of fruit, floral and mineral aromatics in our wines. The growth of the grapes is managed over a relatively short growing season to maximize ripeness and display even the subtlest aromas and flavors.

Winemaking notes: Stainless steel fermentation and aging bring out the naturally crisp, clean fruit flavors in this wine. The two grape varieties are fermented and aged separately. We conduct blending trials to determine the best balance between the two component wines. Finally, the blended wine is bottled young to preserve its fresh, vibrant fruit flavors.

Riesling grapes love our Finger Lakes climate and produce a wide variety of delicious wines. Twenty years ago, dry Rieslings were very rare. Since then, our Dry Riesling has made its mark and become one of the Finger Lakes region’s “new classics”.

Viticulture notes. Each vine was hand-tended to enhance sun exposure and fruit ripening. Crop levels were closely controlled to allow the fruit to express maximum aromatic intensity and complexity.

Winemaking notes. Small lots of grapes were selected from parcels of the estate vineyard and were picked at a moment that would capture the aromatic intensity and crisp acidity of a cool-climate Riesling.

Each lot was fermented separately at cool temperatures in stainless steel tanks to preserve varietal character and aromas. The wine experienced extended post-fermentation aging on light lees, which was periodically stirred back into the wine to increase body, roundness and aromatic intensity. The small batches were then combined into a harmonious blend that displays the complexity of each of its individual components.

Dry Rosé

This lovely refreshing wine was introduced by our founder, Andrew Colaruotolo, in 1981. It was his first rosé, created in reminiscence of the wines of the family’s original vineyard in Gaeta, Italy.

Viticulture Grape: 100% DeChaunac

Harvest date: October 11, 2016

Viticulture notes: DeChaunac is a rare red French-American grape variety developed in France by Albert Seibel in the 1860s. Casa Larga founder, Andrew Colaruotolo, planted several rows of DeChaunac in the late 1970s. Among red wine grapes, DeChaunac is relatively cold hardy, resistant to mildew, vigorous, and early budding and ripening. It produces inky juice that is low in tannins, with earthy aromas and stone fruit notes.

Winemaking notes: DeChaunac grapes designated for Rosé production are picked early to maintain crispness and acidity. They are then whole-berry pressed without crushing to control color and tannin extraction. Fermentation occurs at a very low temperature in stainless steel tanks much like a white wine. The wine is then bottled young to preserve its fresh, vibrant, fruit flavors.
