Dry Riesling

May 27, 2016 by Corey Ameele

Dry Riesling2016 Dry Riesling

Estate Grown and Bottled
Finger Lakes

Riesling grapes love our Finger Lakes climate and produce a wide variety of delicious wines. Twenty years ago, dry Rieslings were very rare. Since then, our Dry Riesling has made its mark and become one of the Finger Lakes region’s “new classics”.

Viticulture

Grape. 100% Riesling

Appellation. Finger Lakes

Harvest dates. Various in October 2016.

Viticulture notes. Each vine was hand-tended to enhance sun exposure and fruit ripening. Crop levels were closely controlled to allow the fruit to express maximum aromatic intensity and complexity.

Winemaking

Winemaker. Matt Cassavaugh

Fermentation. In stainless steel tanks at low temperature

Vintage. 2016

Alcohol by volume. 11.5%

Aging. Stainless steel

Residual sugar. 0.6%

Casa Larga wine series. Classic

TTB ID. 17019-001-000484

UPC. 0-89800-00044-1

Year first produced. 2011

Winemaking notes. Small lots of grapes were selected from parcels of the estate vineyard and were picked at a moment that would capture the aromatic intensity and crisp acidity of a cool-climate Riesling.

Each lot was fermented separately at cool temperatures in stainless steel tanks to preserve varietal character and aromas. The wine experienced extended post-fermentation aging on light lees, which was periodically stirred back into the wine to increase body, roundness and aromatic intensity. The small batches were then combined into a harmonious blend that displays the complexity of each of its individual components.

Enjoying our Dry Riesling

Availability. At our winery in Fairport; at selected wine and spirits stores and restaurants in New York State; at CasaLarga.com for direct shipment to residences and workplaces in 37 states.

Accolades. Double Gold Medal (judges were unanimous), 2017 New York Wine & Food Classic competition.
Aging. Store at cool temperature (55º-60ºF) and out of direct sunlight. This wine is produced to be drunk young, crisp and fresh, i.e. within 2 years of bottling.

Serving temp. 50ºF

Tasting notes. Our crisp dry Riesling exhibits a light floral nose, bright green apple notes, and beautiful natural acidity.

Pairing suggestions. Crab cakes, curries, fish served with lemon, and other citrusy and spicy dishes.

Pinot Noir

May 27, 2016 by Corey Ameele

Pinot Noir2014 Pinot Noir

Estate Grown and Bottled
Finger Lakes

The cherry aromas and distinctive earthy character of the noble Pinot Noir grape are on full display in this elegant wine, a favorite of our winemaker Matt Cassavaugh.

Viticulture

Grape. 100% Pinot Noir

Appellation. Finger Lakes

Harvest date. October 10, 2014

Viticulture notes. Our vineyard crew performs a great deal of hand-thinning & leaf removal on our blocks of Pinot Noir grapes to open up the canopy. The thinner crop allows the vine to focus its nutrients on the primary bunches. Greater sun exposure enhances ripening and encourages tannin development.

Winemaking notes. After we harvest, crush and de-stem our Pinot Noir grapes, we maintain the juice in contact with the skins in a cooler for as long as three days. This “cold-soaking” technique, encourages the extraction of soft tannins from the skins. After pressing, the team uses the “punch-down” technique to ensure full color and flavor, to gently extract tannins and help produce a full, round mouth-feel.

Availability.

  • At our winery in Fairport
  • At selected wine and spirits stores
  • At com for direct shipment to residences and workplaces in 37 states

Aging. Store at cool temperature (55º-60ºF) and out of direct sunlight. Like most French Pinots, this wine is produced to be drunk relatively young, within roughly 3 years of bottling.

Serving temperature. Cool room temperature (60º-65ºF).

Tasting notes. Our lovely Pinot Noir exhibits classic cherry aromas, soft tannins, and distinctive earthiness that is characteristic of this noble variety.

Pairing suggestions. Turkey, duck, roasted or lightly smoked meats, mushroom sauces, hearty pasta dishes, goat cheese.

Petite Noir

May 26, 2016 by Corey Ameele

Petite NoirPetite Noir

Unoaked
Finger Lakes

Petite Noir is a unique, medium-dry, unoaked red wine, fresh, fruity, very low in tannins, and with a tiny bit of sweetness in the background. It’s the perfect introductory red for white wine drinkers!

Viticulture

Grapes. Petite Noir is a unique blend of two red grape varieties (Cabernet Sauvignon and DeChaunac) and one white (Vidal Blanc). The proportions depend on the growing season.

Appellation. Finger Lakes

Viticulture notes. For this and several other wines, our vineyard crew chooses vine management techniques that bring out and preserve the naturally vibrant fruit flavors in the grapes.

Winemaking notes. The grapes fermented for Petite Noir receive moderate skin contact to enhance the red fruit aromas while limiting tannin extraction. Fermentation occurs at lower temperatures common

to red wines yet higher than those used for white. An abbreviated aging period occurs only in stainless steel tanks to allow for maximum expression of fruit. We conduct extensive blend trials and choose a unique proportion of the various component wines to maintain as consistent a flavor profile from year to year as possible.

Enjoying Petite Noir

Availability. At our winery in Fairport; at selected wine and spirits stores and restaurants in New York State; at CasaLarga.com for direct shipment to residences and workplaces in 37 states.

Aging: Store at cool temperature (55º-60ºF) and out of direct sunlight. This wine, like most unoaked wines, was produced to be enjoyed while young and fresh, i.e. within roughly 2 years of bottling.

Serving temperature: Enjoy Petite Noir at cool room temperature or lightly chilled (55º-60ºF).

Tasting notes. Unoaked and fresh, Petite Noir has many of the characteristics of white wines, especially lower tannins and crisp fruit flavors, but with the heartiness of red wines, reminiscent of Beaujolais Nouveau.

Pairing suggestions. Grilled meats, pizza or pasta with tomato-based sauces, salads with sweeter dressings.

Recalling the wines of his youth in Italy, our founder, Andrew Colaruotolo, created this zesty white wine reminiscent of Pinot Grigio.

Viticulture

Viticulture notes. The grapes used in the production of this wine are cold-tolerant, making them ideal for the northern Finger Lakes region: Riesling and Muscat Ottonel (vinifera), and Vidal Blanc (French-American hybrids). We train their vines higher on the trellis than other varieties and they grow downward in an umbrella-like pattern.

They are then racked and placed into barrels. Each component wine in the blend is fermented and aged separately. From a series of options, a blend is selected that maximizes the nuances of each grape while maintaining harmony. The chosen blend is then racked back into barrels where it ages for up to several more months.

Gewürtztraminer

Gewurztraminer2016 Gewürztraminer

Estate Grown and Bottled

Gewürztraminer was among the very first grapes planted by Andrew Colaruotolo at Casa Larga in 1974. This noble cool-climate grape originated in Alsace centuries ago. It is pink or light red in color, yet produces a beautiful aromatic white wine prized for its floral and spice notes. The grape actually shares an aroma compound with lychees. Gewürz means “spiced” or “perfumed” in German.
