Our winemaker hand-selects the highest quality grapes from different vineyard blocks and clones as the foundation for this complex wine with dark berry notes, firm tannins, and a long velvety finish.

Viticulture

Grapes.

55% Cabernet Sauvignon

28% Cabernet Franc

17% Merlot

Viticulture notes. We balance the vine and position the fruit by hand to ensure proper ripening of these three red Bordeaux grapes. We hand-pick them very late in the growing season to maximize ripeness and tannin development.

Winemaking

Winemaker. Matt Cassavaugh

Fermentation. After primary fermentation (yeast), each component wine undergoes malolactic fermentation in stainless tanks and is racked into barrels.

Vintage. NV. Our winemaker can select the best from among different vintages of the component wines to optimize the harmony and complexity of the blend.

Alcohol by volume. 13%

Residual sugar. 0.1%

IRF scale. Dry

Aging. 12-14 months in a variety of oak barrels to add nuance and complexity.

Winemaking notes. Harvested grapes for this wine are pressed into one-ton fermentation tanks. The juices ferment on the skins and caps are punched down twice daily. They are then racked and placed into barrels. Each component wine in the blend is fermented and aged separately. From a series of options, a blend is selected that maximizes the nuances of each grape while maintaining harmony. The chosen blend is then racked back into barrels where it ages for up to several more months.

White oak barrels bring intriguingly different flavors to wine depending on the wood’s origin. The natural oils in our Hungarian oak barrels impart to the wine lovely aromas of toasted apples and a touch of smoke in the finish.

Viticulture

Grapes. 100% Chardonnay

Viticulture notes. We grow four different clones (subspecies) of Chardonnay grapes at Casa Larga. Our vineyard crew thins leaves and clusters to ensure proper ripening and tannin development. Grapes for our Winemaker series Chardonnays are allowed extra ripening time to develop a richness that will later harmonize with the oak flavors extracted from barrels.

The resulting wine is then aged on its lees, stirring every 10-12 days to increase body and aromatic complexity. The wine undergoes full malolactic fermentation and aging in these barrels for 15 months.

Gewürztraminer was among the very first grapes planted by Andrew Colaruotolo at Casa Larga in 1974. This noble cool-climate grape originated in Alsace centuries ago. It is pink or light red in color, yet produces a beautiful aromatic white wine prized for its floral and spice notes. The grape actually shares an aroma compound with lychees. Gewürz means “spiced” or “perfumed” in German.

Viticulture notes. Gewürztraminer is a winter-sensitive yet vigorous vine that needs constant attention to assure the subtle flavors of the grape are expressed in the wine.

Winemaking notes. We use cool fermentation in stainless steel tanks to express the fruit and floral aromas and flavor of the wine. Unlike most white wines, we maintain Gewürztraminer juice in contact with its skins for several hours to extract the complex rose petal and lychee fruit aromas characteristic of the

variety. We rack the wine quickly after fermentation to prevent lees contact. We add to the wine just prior to bottling a small amount of juice (set aside while pressing) to enhance the body, aroma and balance of the wine.

A hearty, dry, oak-aged red with berry notes and a touch of pepperiness, Tramonto (“sunset” in Italian) was created by our founder, Andrew Colaruotolo, in 1986 in fond remembrance of the wines of his youth in Gaeta, Italy.

Viticulture notes.  The grapes used in the production of this wine are relatively cold-tolerant, making them suitable for the northern Finger Lakes region.

Dry Rosé

This lovely refreshing wine was introduced by our founder, Andrew Colaruotolo, in 1981. It was his first rosé, created in reminiscence of the wines of the family’s original vineyard in Gaeta, Italy.

Viticulture Grape: 100% DeChaunac

Harvest date: October 11, 2016

Viticulture notes: DeChaunac is a rare red French-American grape variety developed in France by Albert Seibel in the 1860s. Casa Larga founder, Andrew Colaruotolo, planted several rows of DeChaunac in the late 1970s. Among red wine grapes, DeChaunac is relatively cold hardy, resistant to mildew, vigorous, and early budding and ripening. It produces inky juice that is low in tannins, with earthy aromas and stone fruit notes.

The wine is then bottled young to preserve its fresh, vibrant, fruit flavors.

Winemaking notes. Small lots of estate-grown fruit are picked separately at various levels of maturity and ripeness.  We ferment each lot separately in stainless steel tanks using cool temperatures to preserve the aromatic integrity of the variety.  Fermentation is closely monitored and arrested at a point where the residual grape sugars are balanced by the wine’s natural vibrant acidity.  The individual batches, each with distinct characteristics, are then carefully blended to yield a complex wine displaying the nuances of each small lot.  Finally, we bottle the wine young to preserve its freshness and liveliness.

Our very popular Lilac Hill is an unoaked aromatic white wine with delicate fruit and floral notes. It is the Official Wine of Rochester’s famous annual Lilac Festival.

Viticulture

Grapes. Lilac Hill is a proprietary blend of French-American (Cayuga White) and vinifera (Muscat Ottonel and Riesling) grape varieties.

Appellation. Finger Lakes

Viticulture notes. We manage these types for maximum ripeness to allow their fruit and floral aromatics to intensify. Muscat Ottonel is responsible for the wine’s characteristic floral notes.

Viticulture notes.  The grapes used in the production of this wine are cold-tolerant, making them ideal for the northern Finger Lakes region.  We train their vines higher on the trellis than other varieties and they grow downward in an umbrella-like pattern.

Dolci Bianco

This lovely fruity blend is composed of one variety from each of the major classes of wine grapes: vinifera (Muscat Ottonel), hybrid (Cayuga White), and labrusca (Niagara).

Winemaking notes: We ferment each of Dolci Bianco’s component wines separately in stainless steel tanks at low temperature, to bring out the fruit aromas and flavors in the finished wine.

Aging: Store at cool temperature (about 55º) and out of direct sunlight. This wine, like most unoaked white wines, was produced to be enjoyed while young and fresh, i.e. within roughly 2 years of bottling.

Serving temperature: Chilled to about 50º

Tasting notes: Dolci Bianco is a fresh, fruity, unoaked, medium sweet white wine with a vibrant floral nose and smooth finish.

Pairing suggestions: Asian or Mexican cuisine with hot spices, sweet and sour or honey mustard sauces, bleu cheeses.
